何と言えばいいか分からない is a natural way to say "I don't know what to say"

I agree with Richard. By the way, I would suggest 誰かがこれを聞くとき (When someone...) rather than 人が... (When people...).

I would say そう聞かれたら instead of 人がこれを聞くとき.

1st part:人に"これ"を聞かれるときに(when asked "this")
2nd parts:
何を言えばいいのか分からない。
どんな風に答えるべきかわからん、
何と言ったらええって知らない
答えは(いつも）困ります。
